I don't use phrases like that often, but this chicken salad.
With a batch of homemade mayo sitting in the fridge, I needed a really good recipe to use it up with. Something that was super creative and worthy of the delicious homemade mayo. Something exciting and entirely new.
Well, there was also leftover roast chicken in the fridge from dinner the night before, as well as a large amount of free-range bacon my dad smoked himself this weekend. So, lazy Margaret came up with bacon-chicken salad, with a diced apple for a fall touch. Boring.
But boy was I mistaken! This is the crack of chicken salad. The smoky bacon with the tart apple, fresh scallions, and outstanding mayo was far better than I can have ever imagined. It's a quick, simple lunch that tastes straight off a five star menu. Nick and I enjoyed this on lettuce leaf wraps with a sprinkle of smoked paprika. We've made it twice in the past three days now, it's that good.

Apple-Bacon Chicken Salad
4 cups diced chicken, preferably from a whole, roasted chicken
3 slices thick cut bacon, cooked crispy and diced small
1/2 large tart apple, diced
4 scallions, sliced thin
1/3 cup homemade mayo, or to taste
salt and pepper, to taste
lettuce leaves, for serving
Directions:
Add the chicken, bacon, apple, scallions, and mayo in a bowl and mix well. Season with salt and pepper, to taste. Serve in a lettuce wrap.
