Peanut Butter Cookie Dough Bites (no bake!)


For the love of peanut butter.  Please stop what you are doing and make these.  They are that good. And this is coming from a girl who normally refuses to eat things with peanut butter in it because all other ingredients do is take away from peanut butter's amazingly perfect flavor.  Yes, I normally eat peanut putter by the spoonful or in globs on top of oatmeal, pancakes... you get the idea.  But these little balls of heaven may have changed my mind. 



Arguably they are almost half peanut butter, but even so, I'd never think it was possible to fall so hard for this raw peanut butter cookie dough.  It tastes like peanut butter cookies only better.  They have more peanut butter flavor, a moist, melt-in-your mouth fudge like texture, with just the right amount of honey sweetness to perfectly accent the nutty flavor (feel free to add more honey as your sweet tooth desires).  As an added bonus, they require no baking. Instant satisfaction makes everything better!


Of course I paired this heavenly cookie dough with chocolate.  Raw cocoa nibs to be exact, but chocolate in any form would be fine.  I dipped one or two in the cocoa nibs but ate quite a few plain.  I couldn't get enough of the peanut butter goodness!  Check out my Chocolate Peanut Butter Cookie Dough Blizzard using these delicious bites. Peanut Butter Cookie Dough Bites 
vegan, gluten free, dairy free (makes about 25 one inch balls)

1 cup old fashioned rolled oats (make sure they are certified gluten free if necessary)
1/2 cup shredded unsweetened coconut
1/2 cup natural peanut butter (if not salted, add a pinch of salt)
1/2 tsp vanilla extract
1/8 tsp ground ginger
3 Tbsp raw honey (or agave/maple syrup to make it vegan)

Directions:

Add oats and coconut a food processor and pulse until just combined.  Add the rest of the ingredients to the food processor and process on high until a smooth dough is formed, stopping to scrape down the sides as necessary.  Once dough consistency is reached, break into bite sized pieces, roll into balls and refrigerate 20 minutes or so to harden (or pop in you mouth immediately!)

    2. Affirmative. And they are so incredibly easy. I had to restrain myself so they would make it to the rolling into balls stage. Also I recommend making small balls to make them last longer (or get you to make more trips to the frig to earn them), or else make a double batch. Thank you.
