Simple Orange and Sour Cream Salmon Salad


I want my computer back!!  You never realize how much you rely on your computer until it's gone. It took me nearly two hours to (badly) edit the four photos in this post. Grrrrrr!!! The loaner computer I'm using is quite large, old, and just different than my mac.  Call me a creature of habit (or an apple addict), but nothing quite compares to a mac.  Of course I'm not going to let that stop me from sharing recipes with you guys, however it has been 5 business days since my mac was sent out for repair SO I should have it back by now.  Just saying.  Don't tell me 3-5 business days and get my hopes up!

The past few days have been pretty busy without me stressing out about when I will have my computer back, and I haven't had a ton of time to cook or go to the food store.  I have been making most of my meals by fridge diving, aka. scouring the fridge and cabinets to see what I have to work with. I like to think of it as the Chopped home addition.


I struck scrounging gold with this salmon salad.  It has a surprisingly complex flavor for such simple ingredients, and I love how light and refreshing it is.  I found a can of wild-caught salmon from early last fall (that I kept forgetting about) and decided it was time to use it (and it was just about the only thing left in the house:).  Instead of mayo, I used sour cream and spruced it up with some fresh cilantro, orange zest, red onion, and avocado.  When scooped on some lettuce wraps, this is truly divine!  Maybe I should clean out the kitchen more often...



Simple Orange and Sour Cream Salmon Salad

5 oz cooked salmon (I used wild-caught salmon in a can)
3 Tbsp sour cream
2 tbsp finely chopped red onion
2 tbsp finely chopped cilantro
1/4 avocado, diced small
1 tsp orange zest
1/2 tsp fresh grated ginger (optional)
salt and pepper, to taste

lettuce leaves, for serving

Directions:
Mash the salmon with a fork, and add everything except the avocado.  Mix well.  Stir in the diced avocado. Taste to see if you need more salt/pepper.  Spoon on washed lettuce leaves and enjoy!
