Banana Blueberry Silver Dollar Pancakes for One


Happy Monday!  I thought I'd brighten your week with pancakes.  Today I was planning on posting about canning, however after I made these pancakes for the second morning in a row I changed my mind.  I had to share these immediately!



Brimming with banana and fresh blueberry goodness, these pancakes are the perfect way to start your day.  I have found that pancakes make everything better!  These pancakes are even better than most pancakes because they are packed with protein, fiber, and grain-free.  But let's be honest; all that really matters is they taste phenomenal!

You can whip up this batter in one bowl, making this not only a healthy and delicious breakfast, but also quick and easy.  This recipe is portioned for a single serving, meaning you won't overeat because there are leftovers ;)  I have to say, the best part is one recipe makes about 18 2-3" pancakes, and you can eat the whole batch guilt-free!  Pure pancake bliss.

One more thing I need to share with you guys; I got a puppy!  She is a rescue puppy we named stella. So, between puppies and pancakes, I hope I made your Monday a little brighter!






Banana Blueberry Silver Dollar Pancakes

1 very ripe banana, mashed
1 cup fresh blueberries (frozen will work as well)
2 eggs
3 Tbsp 2% greek yogurt (sub with non-dairy yogurt for dairy-free version)
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp baking soda
pinch of salt
2 Tbsp coconut flour

1-2 tsp pasture-raised butter or coconut oil

Directions:
Whisk everything together well, then let the batter sit for 2-3 minutes.  Heat a skillet or pan on medium heat.  Let the skillet get very hot before adding the butter and greasing the entire surface. Spoon the batter onto the skillet, about 1-2 Tbsp per pancake.  Drop 2-3 blueberries on each pancake. When the batter begins to bubble, flip the pancakes and let cook for about a minute on the other side.
