Chocolate Covered Figs



I have already confessed my love of Raisinets as a kid.  But it is time to grow up.  So I am taking a fruit that I hated as a kid, figs, and subbing them in for raisins.  The result?  Pure bliss.  I dare you to be unhappy eating these.


Dried figs are naturally super sweet, and in my opinion, begging to be coated in chocolate. Unsweetened chocolate.  The kind of chocolate that you are supposed to use in baking because it is unpalatable alone.  Combining the concentrated sweetness of the dried figs with pure unsweetened chocolate is a match made in heaven!  These morsels are the perfect amount of sweet and rich chocolate flavor.  I came up with the idea when I made my super seedy hemp bars this past weekend with unsweetened chocolate instead of cacao nibs because I had ran out.  Although I was skeptical of using plain chocolate at first, the fig and chocolate combination blew me away!  I then topped a square of the chocolate with a dried fig to further test the combination.  Perfection.

Chocolate Covered Figs

8-10 dried figs (I used kalamata figs)
4 oz unsweetened chocolate OR 1/2 recipe for three ingredient chocolate
1 tsp coconut oil

Directions:
1. Melt the chocolate with the coconut oil.   You can use a double boiler, microwave, or heat-safe bowl in a pan of hot water.


2.  Line a baking sheet with wax paper.  Slice the figs into 1/4-1/2 inch pieces.  Using a toothpick, dip each piece into the melted chocolate so it is completely covered, then pace it on the prepared pan.


3.  Place the candies in the fridge until hardened.  Once chocolate is hard, you can store them in a air-tight container in the fridge.
