I have already confessed my love of Raisinets as a kid. But it is time to grow up. So I am taking a fruit that I hated as a kid, figs, and subbing them in for raisins. The result? Pure bliss. I dare you to be unhappy eating these.

Chocolate Covered Figs
8-10 dried figs (I used kalamata figs)
4 oz unsweetened chocolate OR 1/2 recipe for three ingredient chocolate
1 tsp coconut oil
Directions:
1. Melt the chocolate with the coconut oil. You can use a double boiler, microwave, or heat-safe bowl in a pan of hot water.
2. Line a baking sheet with wax paper. Slice the figs into 1/4-1/2 inch pieces. Using a toothpick, dip each piece into the melted chocolate so it is completely covered, then pace it on the prepared pan.
3. Place the candies in the fridge until hardened. Once chocolate is hard, you can store them in a air-tight container in the fridge.
