Garlic Ginger Kale


Kale is king of the leafy green vegetables.  Period.  It is my go-go green that compliments just about anything you pair it with.  This Garlic Ginger Kale is my new favorite preparation of kale that is ready in less than ten minutes.  Who knows, you might just like these better than the rest of your meal. Seconds anyone?


I have been collecting my favorite recipes for side dishes that are healthy, flavorful, and fast.  Last week I posted about Italian Mushroom Fried "Rice".  This week kale takes center stage, accented by garlic, spicy ginger, and lemon zest.  It is such a simple dish that I almost feel silly posting a recipe, but it is so flavorful I just have to share it!  I have been making huge batches of this and reheating it for a quick lunch.  Yesterday I paired it with an sun-dried tomato guacamole topped basil-pepper chicken burger (recipe to come next week).  Perfection!  Next time you come across a bunch of kale, grab it and make this dish. You won't be sorry!



Garlic Ginger Kale

yield: 1-2 servings

1 bunch kale (my favorite is dino kale, but any type of kale will work)
2 large garlic cloves, minced
1 Tbsp extra virgin olive oil
1/2 inch ginger, zested
1/2 tsp lemon zest
salt and pepper, to taste

Directions:
Thoroughly wash the kale and remove the veins.  Chop the leaves into small strips.  Heat the oil in a pan on medium heat, and add the garlic.  Saute for  about 30 seconds, or until the garlic is fragrant. Add the kale and cook until the kale is wilted, about 1-2 minutes.  Turn off the heat and give it a good shake of salt and pepper.  Add the zested ginger and lemon and stir well.

  1. Kale is on my grocery list this week, so I will be sure to make your version of it!:) Plus, don't you just love how lemons, garlic, and ginger make everything better? As a bonus, they're so cheap! Thanks for the great recipe! I believe this would be incredibly healing to the digestive tract too;)

    1. Seriously, lemons, garlic, and ginger are the holy grail of the food world. I don't know what I would do without them! And it is amazing for an upset stomach...guess I'll have to force myself to eat a lot of ginger lol
