Fried Eggs over Sweet Potato Hash


aka weekend breakfast of champions.

aka brunch of all brunches.

aka real food done right.

Eggs are incredible and make some of the most satisfying and scrumptious breakfasts out there.  There are so many ways you can prepare them...over easy, fried, scrambled, in an omelet, not to mention the vast number of toppings and sides that seem to work in perfect harmony with them.  This was my breakfast yesterday morning.  Nick and I whipped up this fantastic hearty meal in under 20 minutes while we drank our morning coffee.  It's quick and easy with incredible flavor and tastes like you ordered it right off a fancy breakfast menu.  But, you get to eat it in your pajamas, which makes everything better :)


If you don't know me by now, I'm pretty much a make-it-from-scratch kind of girl.  This was my first time attempting a sweet potato hash, and certainly won't be my last!  We seasoned these with what we had on hand, but next time I'm already planning on adding more spices to enhance the flavor.  I also think they could have been crispier, but they were so delicious it didn't even matter.  You have to have a starting point, right?  Sweet potatoes are so much better than regular potatoes, although that's just my personal opinion.  Feel free to swap the sweet potatoes for regular ones if that's your thing, but seriously at least try it with sweet potatoes.  You might not go back.

I can't take credit for the beautifully fried eggs, that's Nick's speciality.  While he cooked the eggs, I steamed some broccoli because I needed something green.  Totally not related to the overall meal, but there is never a bad time to add some green to your dish. Come on, broccoli adds a pop of color to the plate!


You will be surprised at just how easy it is to make a restaurant quality breakfast right in your own kitchen.  Get cracking!


Fried Eggs over Sweet Potato Hash

serves 2 hungry people

For the sweet potato hash:
1 large sweet potato, peeled and diced small
1/4 cup chopped onion
1/2 tsp garlic powder
1 Tbsp olive oil, coconut oil, or butter
salt and pepper, to taste
cayenne pepper, to taste (optional)
1/8 tsp ground thyme

5-6 fried eggs

2 Tbsp fresh basil, chopped

Directions:
Saute oil and onions in a pan over medium heat until onions are translucent, about 5 minutes.  Add sweet potatoes and cook for 2-3 minutes before adding the seasonings.  Cook for another 7-10 minutes, or until sweet potatoes are tender.  Place in the oven under the broiler for about 5 minutes until potatoes start to brown and are crispy.  Spoon onto plates and top with fried eggs.  Sprinkle with basil.

  1. I really want to try these but it is not a good time for sweet potatoes in the store here. No fear, someday when I'm browsing back through, I'll go for it.

    1. Ah, hope you find some sweets soon! I usually always can find them...but there have been a few times they were not in stock, and those were some bad days haha.
